Mid-August. James met his parents again — this time at our apartment (mine, technically, but James is there most nights). Helen and Michael visited Seattle for a weekend and I cooked a full Korean spread: galbi, japchae, three banchan, kimchi jjigae. Helen ate everything with the evaluating precision of a Taiwanese mother who takes food seriously. Michael asked for the galbi recipe. The in-law bonding continues through food, the universal language of parental approval.

Saturday: Bellevue. Karen made her chicken potpie. I brought leftover galbi. David liked the galbi enough to ask, "Can you make this next week too?" David requesting Korean food. The evolution from tolerance to preference to request. Three and a half years of data points, trending upward.
Between Helen’s quiet approval in Mandarin and David’s unprompted request for more galbi, this week reminded me how much of relationship-building happens at the table — and how you need at least one reliable, no-drama dish in your rotation for the moments when the stakes feel lower but the warmth is just as real. Broccoli Cheddar Squares

Ingredients
- 3 cups fresh broccoli florets, finely chopped
- 2 cups shredded sharp cheddar cheese
- 1 cup biscuit baking mix (such as Bisquick)
- 1/2 cup whole milk
- 3 large eggs, lightly beaten
- 1/4 cup finely diced yellow onion
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1 tablespoon butter, for greasing the pan
Instructions
- Preheat & prep. Preheat your oven to 375°F. Grease a 9×13-inch baking dish with butter and set aside.
- Steam the broccoli. Steam or microwave the chopped broccoli for 2–3 minutes until just tender but still bright green. Drain well and pat dry with paper towels to remove excess moisture.
- Mix the batter. In a large bowl, whisk together the biscuit mix, milk, and eggs until a smooth batter forms. Stir in the garlic powder, salt, and pepper.
- Fold in the filling. Add the broccoli, diced onion, and 1 1/2 cups of the cheddar cheese to the batter. Stir until evenly combined.
- Bake. Pour the mixture into the prepared baking dish and spread evenly. Scatter the remaining 1/2 cup of cheddar over the top. Bake for 28–32 minutes, until the top is golden and the center is set.
- Cool & cut. Let the bake rest for 10 minutes before cutting into squares. Serve warm or at room temperature — they travel well and hold their shape.
