- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon onion powder
- 3/4 teaspoon kosher salt, divided
- 1/4 teaspoon black pepper
- 2 ripe peaches, pitted and diced (about 1 1/2 cups)
- 1 large avocado, pitted, peeled, and diced
- 1/4 cup finely diced red onion
- 1 small jalapeño, seeded and minced
- 2 tablespoons fresh cilantro, chopped
- 2 tablespoons fresh lime juice (about 1 lime)
- 1/2 teaspoon honey
Instructions
- Season the chicken. Pat the chicken breasts dry with paper towels. In a small bowl, combine garlic powder, smoked paprika, cumin, onion powder, 1/2 teaspoon salt, and pepper. Rub the spice blend evenly over both sides of each chicken breast.
- Sear in the skillet. Heat olive oil in a large cast iron skillet or heavy-bottomed pan over medium-high heat until shimmering. Add the chicken breasts and cook undisturbed for 6–7 minutes, until the underside is deep golden brown.
- Finish cooking. Flip the chicken and reduce heat to medium. Cook for another 6–8 minutes, or until the internal temperature reads 165°F at the thickest part. Transfer to a cutting board and let rest for 5 minutes before slicing.
