Ingredients
- 1 1/2 lbs ground turkey
- 1 medium yellow onion, diced
- 1 red bell pepper, diced
- 4 cloves garlic, minced
- 2 chipotle peppers in adobo sauce, minced, plus 1 tablespoon adobo sauce
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 cup low-sodium chicken broth
- 2 teaspoons chili powder
- 1 1/2 teaspoons ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- Salt and black pepper to taste
- 1 tablespoon olive oil
- Optional toppings: shredded cheddar, sour cream, sliced jalapeños, chopped cilantro, lime wedges
Instructions
- Sauté the aromatics. Heat olive oil in a large heavy-bottomed pot or Dutch oven over medium-high heat. Add the diced onion and bell pepper and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook 1 minute more until fragrant.
- Brown the turkey. Add the ground turkey to the pot. Break it apart with a wooden spoon and cook until no pink remains, about 7–8 minutes. Drain any excess liquid if needed.
- Add the heat. Stir in the minced chipotle peppers and adobo sauce. Add the chili powder, cumin, smoked paprika, and oregano. Cook for 1–2 minutes, stirring constantly, until the spices are fragrant and well coated.
- Build the chili. Pour in the fire-roasted tomatoes, black beans, kidney beans, and chicken broth. Stir everything together and bring to a boil.
- Simmer low and slow. Reduce heat to low, cover partially, and simmer for 25–30 minutes, stirring occasionally, until the chili thickens and the flavors meld. Taste and adjust salt and pepper as needed.
- Serve. Ladle into bowls and top with your choice of shredded cheddar, sour cream, cilantro, jalapeños, and a squeeze of fresh lime.
