Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 cup (1 stick) unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 1/2 teaspoons vanilla extract
- 48 maraschino cherries, drained and patted dry (reserve 3 tablespoons juice)
- 1 cup semi-sweet chocolate chips
- 1/2 cup sweetened condensed milk
Instructions
- Preheat the oven. Heat your oven to 350°F. Line two baking sheets with parchment paper.
- Mix the dry ingredients. In a medium bowl, whisk together the flour, cocoa powder, salt, baking powder, and baking soda. Set aside.
- Cream the butter and sugar. In a large bowl, beat the softened butter and granulated sugar with a hand or stand mixer on medium speed until light and fluffy, about 2–3 minutes.
- Add the egg and vanilla. Beat in the egg and vanilla extract until well combined.
- Combine wet and dry. Gradually add the flour mixture to the butter mixture, mixing on low speed until a soft dough forms.
- Shape the cookies. Roll the dough into 1-inch balls and place them about 2 inches apart on the prepared baking sheets. Press your thumb or the back of a small spoon into the center of each ball to create a well.
- Add the cherries. Place one maraschino cherry into the center of each cookie well.
- Make the chocolate topping. In a small saucepan over low heat, combine the chocolate chips and sweetened condensed milk, stirring until melted and smooth. Stir in the reserved 3 tablespoons of maraschino cherry juice until incorporated.
- Top the cookies. Spoon approximately 1 teaspoon of the chocolate mixture over each cherry, spreading gently to cover it. The chocolate will settle around and over the cherry during baking.
- Bake. Bake for 9–11 minutes, until the cookies are set and the chocolate topping is glossy. Do not overbake.
- Cool completely. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack. The chocolate topping will firm up as they cool.
