Sean got me flowers—tulips, yellow, which I love more than roses because roses are obligatory and tulips are a choice—and a card with writing in it that he'd clearly thought about, which is not his usual mode. We made dinner at home together. Chopped Thai Salad with Honey Garlic Dressing

Ingredients
- For the Salad:
- 3 cups shredded purple cabbage
- 2 cups shredded green cabbage
- 1 cup shredded carrots
- 1 red bell pepper, thinly sliced
- 1 cup edamame, shelled and cooked
- 1/2 cup thinly sliced scallions
- 1/2 cup fresh cilantro leaves
- 1/4 cup roasted salted peanuts, roughly chopped
- 2 tablespoons sesame seeds
- For the Honey Garlic Dressing:
- 3 tablespoons rice vinegar
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 2 tablespoons honey
- 1 tablespoon sesame oil
- 1 tablespoon neutral oil (such as avocado or canola)
- 2 cloves garlic, finely minced or grated
- 1 teaspoon freshly grated ginger
- 1/2 teaspoon red pepper flakes (optional)
- Juice of 1 lime
Instructions
- Make the dressing. Whisk together the rice vinegar, soy sauce, honey, sesame oil, neutral oil, garlic, ginger, red pepper flakes, and lime juice in a small bowl or jar until fully combined. Taste and adjust seasoning — add more honey for sweetness or more soy sauce for salt. Set aside.
- Prep the vegetables. Shred the purple and green cabbage thinly using a sharp knife or mandoline. Slice the red bell pepper into thin strips. Shred or grate the carrots. Place all into a large mixing bowl.
- Build the salad. Add the edamame, scallions, and cilantro to the bowl with the cabbage and carrots. Toss gently to combine.
- Dress and finish. Pour the dressing over the salad and toss well to coat evenly. Top with chopped peanuts and sesame seeds just before serving so they stay crunchy.
- Serve. Serve immediately for maximum crunch, or refrigerate the undressed salad and dressing separately for up to 2 days and toss together when ready to eat.
