Grilled Beef & Blue Cheese Sandwiches

Ingredients
- 1 1/2 lbs beef sirloin or flank steak, sliced thin against the grain
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 4 hoagie rolls or ciabatta buns, split
- 3 oz crumbled blue cheese
- 1 cup arugula or mixed greens
- 1/2 red onion, thinly sliced
- 2 tablespoons mayonnaise or horseradish cream (optional, for spreading)
Instructions
- Season the beef. Pat steak slices dry and toss with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated. Let rest at room temperature for 5 minutes while the grill or grill pan heats.
- Grill the beef. Heat a grill or cast iron grill pan over medium-high heat. Cook beef slices 2—3 minutes per side until nicely charred and cooked to your preferred doneness. Work in batches to avoid crowding the pan. Remove and let rest 3 minutes.
- Toast the rolls. Place split rolls cut-side down on the grill for 1—2 minutes until lightly golden and warmed through.
- Assemble the sandwiches. Spread mayonnaise or horseradish cream on the toasted rolls if using. Layer with grilled beef, a generous crumble of blue cheese, red onion slices, and a handful of arugula.
- Serve immediately. Press the tops down gently and serve while the beef is still warm so the blue cheese softens slightly against the meat.
