The ribeyes were for Dad’s day — tradition, thermometer, garlic butter, all of it — but Aiden’s dollar-menu had burgers listed first, and a man who takes his children’s restaurant vision seriously has to put in the research. These Mexican Beef Burgers are what I’ll be testing for Carter’s Kitchen: smoky, spiced, built on a hot grill and finished with pepper jack and fresh salsa, the kind of burger that earns its one-dollar price tag and then some. When the door opens — not if, when — this is the recipe that’s going on the menu.
Mexican Beef Burgers

Ingredients
- 1 1/2 lbs ground beef (80/20 blend)
- 1 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp smoked paprika
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 4 slices pepper jack cheese
- 4 brioche burger buns, split and toasted
- 1/2 cup fresh salsa or pico de gallo
- 1 avocado, sliced
- 1 jalapeño, thinly sliced (optional)
- Shredded lettuce and sliced tomato, for serving
- Sour cream or chipotle mayo, for serving
Instructions
- Season the beef. In a large bowl, combine ground beef with chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix gently with your hands just until the spices are evenly distributed — do not overwork the meat.
- Form the patties. Divide the mixture into 4 equal portions and shape into patties about 3/4 inch thick. Press a shallow thumbprint into the center of each to prevent puffing during cooking.
- Heat the grill or cast iron. Preheat a grill or cast-iron skillet over medium-high heat. Lightly oil the grates or pan surface.
- Cook the burgers. Cook patties 4–5 minutes per side for medium doneness (internal temperature of 160°F). Avoid pressing down on the patties while they cook.
- Add cheese. In the last minute of cooking, lay a slice of pepper jack over each patty and cover briefly to melt.
- Toast the buns. Place split buns cut-side down on the grill or skillet for 1–2 minutes until lightly golden.
- Assemble and serve. Layer each toasted bun with shredded lettuce, a burger patty, fresh salsa, avocado slices, jalapeño if using, and a drizzle of sour cream or chipotle mayo. Serve immediately.
