Nora's first birthday was Thursday, April 2nd, and she handled it with the dignity and focus of someone who has been preparing for it. She wore the yellow dress Maureen knitted months ago, which fits perfectly now, and she ate her smash cake with the systematic attention of someone conducting a food review. She got frosting in her ear. She didn't care. She kept eating.
We did Nora's birthday as a family dinner -- the four of us and both sets of grandparents, inside now that everyone is vaccinated, the table that is slightly too small for six doing its best again. Liam sang Happy Birthday to his sister off-key and with real feeling. He has been singing it to her for a week in practice. He wanted to get it right. He got the words right and the melody adjacent.
One year of Nora. One year of her particular personality in the world -- the systematic observation, the decisive opinions, the full-body response to music, the way she loves her brother with a physical wholeness that I find difficult to describe without sounding excessive. When he enters a room she brightens. When he leaves the room she looks at the door. He is her person. She has decided this and the decision is complete.
I made my grandmother's lemon pound cake -- the one from the index card in my grandmother's handwriting that I have kept in a ziplock in the recipe box for fifteen years -- and I thought about her while I made it. She would have loved Nora. She would have recognized something of herself in her. The pound cake was exactly right. I think she helped.
The lemon pound cake I made for Nora’s birthday is the kind of recipe I can’t fully explain — it lives on an index card in my grandmother’s handwriting, and every time I make it, something of her comes with it. If you want to bring that same spirit to your own table, this Orange Dream Angel Food Cake is the closest I can point you toward: a citrus cake that is light and celebratory and just a little luminous, the kind of thing that feels right when the people around your table are the ones who matter most. Make it for a birthday, make it for a Sunday, make it for the day someone you love turns one and handles it with more dignity than you expected.
Orange Dream Angel Food Cake
Prep Time: 20 min | Cook Time: 40 min | Total Time: 1 hr | Servings: 12
Ingredients
- 1 package (16 oz) angel food cake mix
- 1 cup cold water
- 1 tablespoon freshly grated orange zest
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon orange extract
- 1 package (3.4 oz) instant vanilla pudding mix
- 1 cup cold whole milk
- 1/2 cup sour cream
- 1 cup heavy whipping cream, whipped to stiff peaks
- 2 tablespoons powdered sugar
- Additional orange zest for garnish
Instructions
- Prepare the oven and pan. Preheat your oven to 350°F. Have an ungreased 10-inch tube pan ready — do not grease it; angel food cake needs to cling to the sides as it rises.
- Mix the batter. In a large bowl, beat the angel food cake mix with cold water on low speed for 30 seconds, then increase to medium and beat for 1 minute. Fold in the orange zest, vanilla extract, and orange extract until just combined.
- Bake. Pour the batter into the ungreased tube pan and smooth the top gently. Bake for 38 to 44 minutes, until the top is deep golden and cracks look dry. Do not underbake.
- Cool inverted. Immediately invert the pan onto its legs or over a bottle neck and let the cake hang and cool completely, at least 1 hour. This keeps the cake from collapsing.
- Make the orange cream frosting. In a medium bowl, whisk together the instant vanilla pudding mix, cold milk, and sour cream until smooth and slightly thickened, about 2 minutes. Gently fold in the whipped heavy cream and powdered sugar until the frosting is light and fluffy.
- Remove and frost. Run a thin knife around the edges and center tube of the pan to release the cake. Place on a serving plate. Spread the orange cream frosting over the top and sides. Scatter fresh orange zest over the top before serving.
- Chill before serving. Refrigerate for at least 30 minutes to allow the frosting to set. Slice with a serrated knife for clean, even pieces.
