Sassy Salsa Meat Loaves — The Dish That Proved I Could Cook for Sixty

Brianna brought the kids to a catering event I was working — a family reunion at a park. She watched me cook for sixty people and afterward she said, "I never saw this coming. When we were married, you couldn't make toast." I said, "I could make toast. I just didn't." She said, "Same thing." She is not wrong. Not cooking and not being able to cook produce the same result: hunger. I chose to stop being hungry.

The recipe I kept coming back to for that reunion — the one Brianna watched me make for sixty people — was this Sassy Salsa Meat Loaf. There’s something fitting about it: a dish most people think of as plain and humble, but with enough heat and character built right in to surprise you. That’s exactly the kind of cook I was trying to become. If you’re feeding a crowd or just feeding yourself after a long day of finally deciding to show up in your own kitchen, this is the one.

Sassy Salsa Meat Loaves

Ingredients

  • 2 lbs lean ground beef
  • 1 cup chunky salsa, divided
  • 1/2 cup plain breadcrumbs
  • 2 large eggs, lightly beaten
  • 1/4 cup finely diced yellow onion
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 cup shredded sharp cheddar cheese (optional, for topping)

Instructions

  1. Preheat. Heat oven to 375°F. Lightly grease a rimmed baking sheet or line with foil.
  2. Mix the loaf. In a large bowl, combine ground beef, 1/2 cup of the salsa, breadcrumbs, eggs, onion, garlic, chili powder, cumin, salt, and pepper. Mix until just combined — do not overwork the meat.
  3. Shape. Divide the mixture into 8 equal portions and shape each into a small individual loaf, roughly 4 inches long. Place on the prepared baking sheet with space between each.
  4. Top. Spoon the remaining 1/2 cup of salsa evenly over the tops of the loaves. Sprinkle with shredded cheddar if using.
  5. Bake. Bake for 40–45 minutes, until the internal temperature reaches 160°F and the tops are set and slightly caramelized.
  6. Rest and serve. Let the loaves rest 5 minutes before serving. Serve with extra salsa on the side if desired.
