There’s something fitting about it: a dish most people think of as plain and humble, but with enough heat and character built right in to surprise you. That’s exactly the kind of cook I was trying to become. If you’re feeding a crowd or just feeding yourself after a long day of finally deciding to show up in your own kitchen, this is the one.
Sassy Salsa Meat Loaves

Ingredients
- 2 lbs lean ground beef
- 1 cup chunky salsa, divided
- 1/2 cup plain breadcrumbs
- 2 large eggs, lightly beaten
- 1/4 cup finely diced yellow onion
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/4 cup shredded sharp cheddar cheese (optional, for topping)
Instructions
- Preheat. Heat oven to 375°F. Lightly grease a rimmed baking sheet or line with foil.
- Mix the loaf. In a large bowl, combine ground beef, 1/2 cup of the salsa, breadcrumbs, eggs, onion, garlic, chili powder, cumin, salt, and pepper. Mix until just combined — do not overwork the meat.
- Shape. Divide the mixture into 8 equal portions and shape each into a small individual loaf, roughly 4 inches long. Place on the prepared baking sheet with space between each.
- Top. Spoon the remaining 1/2 cup of salsa evenly over the tops of the loaves. Sprinkle with shredded cheddar if using.
- Bake. Bake for 40–45 minutes, until the internal temperature reaches 160°F and the tops are set and slightly caramelized.
- Rest and serve. Let the loaves rest 5 minutes before serving. Serve with extra salsa on the side if desired.
