Spicy Baked Chicken Parmesan -- The Dish That Made My Kids Say "Dada Cooks"

I got the kids for the first time since Brianna left. A weekend. Spicy Baked Chicken Parmesan

Ingredients

  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 1 cup Italian-seasoned breadcrumbs
  • 1/2 cup grated Parmesan cheese, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon crushed red pepper flakes (adjust to taste)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 large eggs, beaten
  • 1 cup marinara or spicy arrabbiata sauce
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat oven. Heat oven to 400°F. Lightly grease a baking dish or sheet pan with olive oil or nonstick spray.
  2. Pound the chicken. Place chicken breasts between two sheets of plastic wrap and pound to an even 3/4-inch thickness so they cook evenly.
  3. Mix the breading. In a shallow bowl, combine breadcrumbs, 1/4 cup of the Parmesan, garlic powder, onion powder, smoked paprika, red pepper flakes, salt, and black pepper. Stir to combine.
  4. Bread the chicken. Dip each chicken breast into the beaten eggs, letting excess drip off, then press firmly into the breadcrumb mixture on both sides to coat well.
  5. Sear for crunch. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the breaded chicken 2–3 minutes per side until golden, then transfer to the prepared baking dish if needed.
  6. Add sauce and cheese. Spoon 2–3 tablespoons of marinara sauce over each piece of chicken, then top evenly with shredded mozzarella and the remaining Parmesan.
  7. Bake until done. Bake uncovered for 18–22 minutes, until chicken reaches an internal temperature of 165°F and cheese is melted and lightly browned.
  8. Rest and serve. Let chicken rest 5 minutes before serving. Garnish with fresh basil or parsley if desired. Serve over pasta, rice, or with crusty bread.
