The plan: enroll in the MSN program at UAA in January. Continue working the ER while studying. Transition to teaching within two to three years. The timeline is long. The timeline is correct. The transition from twelve years of bedside nursing to the classroom doesn't happen in a month. Sweet ’n’ Tangy Carrots

Ingredients
- 2 pounds carrots, peeled and cut into 1/4-inch diagonal slices
- 2 tablespoons butter
- 1/3 cup packed brown sugar
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (optional garnish)
Instructions
- Cook the carrots. Place carrots in a large saucepan and cover with water. Bring to a boil over high heat, then reduce to medium and cook until just tender, about 8 to 10 minutes. Drain well and set aside.
- Make the glaze. In the same saucepan, melt butter over medium heat. Stir in brown sugar, apple cider vinegar, Dijon mustard, salt, and pepper. Cook, stirring constantly, until the sugar dissolves and the mixture begins to bubble, about 2 minutes.
- Coat the carrots. Return the drained carrots to the pan. Toss gently to coat evenly in the glaze. Cook for 3 to 4 minutes, stirring occasionally, until the glaze thickens slightly and the carrots are heated through.
- Serve. Transfer to a serving dish and garnish with chopped parsley if desired. Serve warm.
